Bamboo shoots have long been a specialty of the Northwest in general and Hoa Binh in particular. Straight, white bamboo shoots are picked by people from the forest, usually boiled after picking to keep the fresh or some other families choose to leave it until dawn the next morning to boil, so when brought to market bamboo shoots are still warm. Therefore, bamboo shoots in Hoa Binh usually do not have any preservatives. Bamboo shoots are very delicious with the crispness and sweetness are still intact in each shoot.

In July 2019, the mountain goat meat product of Hoa Binh Agriculture Cooperative (Luong Son district) was the first meat goat product in the province to be granted VietGAP certification. With the desire to create clean products to serve consumers, the members of the Cooperative have implemented the goat-raising process subject to VietGAP standards, the breeding site is arranged scientifically without using antibiotics in the herding. The goat's main food is grass and natural leaves in the forest, in addition, every day, each goat climbs from nine to 10 km to the mountain to eat grass, so goat meat is very firm and delicious.
