Along with black canariums, green canariums have long been a specialty of the Northwest region in general and Hoa Binh in particular. The mild sourness of the canarium mixed with the fatty sweetness of the meat makes the dish strangely appealing without being too greasy.
The ripe green canarium season is usually from about June to August of the lunar calendar. It can be eaten well when it reaches old age, usually with a light-yellow color, slightly tanned with sour taste and pretty sweet. According to folk experience, green canariums not only provide many vitamins and minerals, but also can be used as medicine to reduce cough, eliminate phlegm, reduce sore throat, hoarseness and strengthen the digestive system, etc.
